Lachha Paratha or Lachedar Paratha is a popular paratha from North India, made from whole wheat flour. It is also called 'Paratwala Paratha', wherein 'parat' means layers and layers can be seen when paratha is cooked. Ingredients:
(Serves 2)
- Wheat Dough
- Wheat Flour
- Ghee (Clarified Butter)
- Salt
- Carom Seeds
Method 1:
1. Take regular wheat flour which is kneaded with water without any salt or oil added in it; apply some flour on it and roll a paratha
2. Now, apply ghee over the rolled dough and sprinkle some salt, carom seeds, flour on it
3. Start folding the paratha like a fan and stretch both the ends a little
4. Now, press it from one end, Start rolling the dough inwards, and once rolled, take the other end and press it in the center
5. Pat the paratha from the center with both the hands without applying much pressure
6. Start heating the pan and roll the paratha flat one more time, applying a light pressure
7. Place it over the pan, and apply ghee over the paratha on both the sides
8. Keep flipping the paratha in middle and once made, take it out and on a plate and serve it hot
Method 2:
1. Roll the dough and apply ghee, salt, carom seeds
2. Now, with the help of a pizza cutter or knife, cut horizontal stripes of the rolled dough
3. Apply some wheat flour over the paratha, and start placing each strip one over the other
4. With the help of some wheat flour, stretch it a little from both ends and roll it inwards
5. Now, pat it with hands, roll it flat and place it over a pre-heated pan
6. Apply ghee on both the sides and keep flipping it in middle
7. Once the laccha paratha is made, take it out on a plate and serve it hot
